Turkish Ravioli (Manti)
Ingredients
For the Pasta:
2 Bowls of flour
2 Eggs
Salt
Water
Filling:
3/4 Pounds ground beef
1 Large onion
Black pepper, red pepper and salt
1/2 cup parsley, fine chopped
For Boiling:
7 Cups of water
2-3 teaspoons of salt
Preparation
1. Put the flour in a large bowl and add the eggs and salt (to your taste). Make a dough by adding the water slowly. It should be a hard dough. Make 4 balls out of it. Place a damp cloth on top of the balls and let them sit.
2. Chop the onion finely and add the ground beef, spices and finely chopped parsley.
3. Put flour on an island or a smooth surface and place one of the dough balls, add flour on top and with the help of a rolling pin, thin the dough (it should be thin, like the thicker part of a knife). Cut into little squares (less than an inch square) and place the meat filling in the middle of every square. Close the squares by pinching from all sides.
4. Boil the water in a large pot and add the salt when boiling. Add the pasta and cook about 10 minutes.
5.Melt the butter in a saucepan. Add the tomato paste and the spices, make a sauce.
6. Place the pasta in a bowl, add the garlic flavored yoghurt and the sauce on top. If you like, you can also add dried mint and sumac when serving.
Afiyet olsun! / Bon appetite!
