Menemen

Ingredients

1 big onion finely chopped
3 tomatoes petite diced
1 fresh green pepper diced
3-4 whole eggs
2 tbsp olive oil
Salt
Pepper

Preparation

1. Saute chopped onions with oil in a medium skillet. Add green pepper, saute until tender. Add diced tomatoes and stir to combine.
2. Sprinkle some salt and pepper to taste. When tomatoes become soft, crack the eggs. You can mix them well or you may leave the eggs on top without stirring until cooked.

Simit (about 6-7 simit)

This is the recipe for the street version of simit. There are different kinds of it, but this is by far the most popular one! Enjoy!

Ingredients

1 cup warm water
1,5 teaspoon instant yeast
1 tablespoon salt
1 teaspoon sugar
flour (about 2 1/2 cups or more)
roasted sesame seeds
grape molasses + water

Preparation

1. Mix the warm water, yeast and sugar in the bowl you are going to make the dough, wait for 5 minutes for the yeast to get activated.
2. Add the salt and flour to the yeast mixture and knead the dough. You should get firmer dough than usual bread dough; if it is not firm enough add more flour.
3. Cover the bowl and let the dough rise for about 15-20 minutes.
4. If you use a bread machine to make the dough, check the firmness of the dough and add flour accordingly.
5. Cut the dough in large egg-sized pieces. Roll them out into long strips and take two strips of dough at a time and make a braid.
6. Put the finished simits in a clean area and let them rise. When all is finished, first dip them on both sides in the diluted grape molasses.
7. Next, dip both sides of the simit in the sesame seeds. If you can't find roasted sesame seeds, just roast them in a non-stick pan over medium heat by stirring occasionally.
8. Place the simits in a lightly oiled tray and cook in a 450 degree preheated oven for 10 minutes, and for two minutes put them in the broiler, but watch carefully as the broiler tends to burn them pretty fast.
