Free Cooking Classes: Turkish Borek

InterFaith Cultural Organization (IFCO) continues its free classes. This week we are going to show how to cook Turkish borek. If you would like to learn and taste how to prepare this tasty dish, please come and join us.

Free tea will be served with Turkish borek at the end of class.



BOREK WITH SPINACH AND FETA

Ingredients:
1 package fillo Dough

Filling:
1 pound frozen spinach or a bag of fresh baby spinach
1 cup crumbled feta cheese
3 tbsp olive oil
1 onion, finely chopped
Salt, pepper to taste

Sauce:
1 egg
1/2 cup milk
1/2 cup oil

Topping:
Nigella seeds
sesame seeds

Preparation:
Thaw the fillo dough according to package directions. Preheat the oven to 350 °F.

In a medium saucepan, sauté onion in olive oil on medium high heat, until lightly brown. Add spinach, salt and pepper. Cook until spinach is tender. Turn the heat off and let cool room temperature. Stir feta cheese in and mix well. Set aside. To make liquid mixture, whisk egg, milk, and oil.

Oil the tray. Place 3 sheets of fillo dough and brush with the liquid mixture. Continue this process until you finish the first package (twin pack) of the fillo dough. Add the filling. Make sure that it is evenly distributed and try to squeeze any juice from the spinach beforehand. Continue the process of layering and brushing with the mixture till you finish all the dough. Brush the top generously with the mixture. Add the sesame or nigella seeds according to your taste.Bake in pre-heated 350 degree F until golden brown.

TRIANGLE PASTRIES WITH GROUND BEEF

Ingredients:
1 package puff pastry

For filling:
8-10 oz ground beef
1 onion finely chopped
2-3 tbsp cooking oil
˝ bunch finely chopped flat leaf parsley
1 tbsp pepper paste
Salt
Pepper

For top:
1 egg yolk
Sesame seeds

Preparation:
To make filling, heat a medium pan and saute chopped onion in 3 tbs oil. Add 1 tbsp pepper paste. Mash it with the help of a fork. Add ground beef and saute 8-10 minutes more. Add salt and pepper to taste. Turn the heat off. Let it cool to room temparature. Add chopped parsley and stir well.

Cut already thawed puff pastry sheets into small squares. Put 1 tbsp fililling in it and close like triange and press to seal it.

Brush their tops with egg yolk and sprinkle some sesame seeds. Place them 2-3 inch apart from each other on a lightly greased baking sheet and bake in pre-heated 400 F for about 15 minutes or until golden brown.

CIGAR BOREK

ingredients:
A package Turkish triangle pastry sheets (or you could use phyllo dough as well)

Filling:
8-10 oz feta cheese
Chopped parsley
Oil for deep fry

Preparation:
Combine cheese and parsley in a small bowl and place one pastry sheet. Spread 1 tsp cheese filling on wide side of pastry sheet. Fold the edges on top, Roll it till the end and brush it with water to stick the edges.

When you finish all the pastry sheets, fry them until golden brown. You can also use sauted ground beef or mashed potato& cheese as a filling.
