Free Cooking Classes: Noah's Puding

InterFaith Cultural Organization (IFCO) continues its free classes. This week we are going to show how to cook Noah's Puding (Asure). If you would like to learn and taste how to prepare this tasty dish, please come and join us.

ASURE (Noah's Pudding)
"The Prophet Noah called his people to the religion of God for nine hundred and fifty years. When his people insisted on unbelief and persisted in their wrongdoings, God ordered him to build an ark. After completing the construction of the ship, Noah embarked in it, upon God's command, of each kind two, male and female, his family-except those against whom the Word (of punishment) had already gone forth,-and the believers". [Qur'an 11:40]
Origin of Asure
There is a legend about the origin of this dessert. It goes like this: In the Flood, Noah took into his ship one pair of each of the living creatures and after the ship struggled with the waves in the flood, it came aground on the top of a mountain (which is speculated as the Agri Mountain, the highest mountain in Turkey and Europe with its summit of 5137 meters). This is also mentioned in the Old Testament. When the waters receded, Noah, his family and the other creatures left the ship and multiplied and formed the second human generation.
When Noah's Ark came to rest after the Great Deluge, they felt the need to organize a feast to celebrate. But their supplies were exhausted. However, they searched through the Ark and every little bit of food they could find, they put it into the pudding and made themselves splendid feast of "Asure." Hence, they had a good taste in a very difficult condition.
Why Asure?
The most important characteristic of Asure is that ingredients, not related to one another, are combined: Haricot bean, chickpea, broad bean, wheat, currant, apricot, fig, orange peel, hazelnut, walnut, pignolia, chestnut, raisin, rose extract, rice, milk, sugar with pomegranate pieces on it. Now as you can see, such different ingredients come together and a flavor, which is third in the world, emerges.
What is nice about Asure?
Each of the ingredients in Asure preserves its own flavor, however, this flavor does not come to the fore. We feel their flavors separately, nevertheless, there is a dominant a new flavor: The Asure flavor. The most important point is the way of cooking Asure. The cooking periods of the ingredients differ. Firstly they are cooked separately. Some are soaked. Some are added as they are.
The Asure Flavor and Dialogue
Today our world is going through a difficult period. We are dealing with gigantic problems such as the gigantic waves that surrounded the Ark of Prophet Noah. Terrorism, corruption, unjust distribution of income, ignorance and laziness are ruining humanity. In order to face these problems, everyone should maintain his/her identity, should not impose anything on the other and should learn how to share. We should glorify our humanity by being what we are. We should preserve our identity, and let the flavor of dialogue fill the earth. That is why Asure is a good example for our dialogue efforts.

Preparation:
Wash the wheat, chickpeas and dried beans. Soak them separately overnight with beans and chickpeas in 1 cup and the whole wheat and rice mixture in 2 cups of water. Add 3 cups of water to whole wheat and 2 cups of water each to chickpeas and beans and place them individually on the burner. Cook the whole wheat until the grains are dissolved and the starch comes out. If necessary, boil the chickpeas in pressure cooker. Wash the dry fruit and soak them for 2 hours in 1½ cups of water. Mix the cooked ingredients and the dry fruit in a pan and cook for 15 minutes. Peel the orange and cut the rid, including the white inner part into 3-4 cm long and 1 cm wide strips. Divide the orange slices into 4-5 pieces. Add them all together to the mixture and cook for another 5 minutes. Add the sugar and cook for 1-2 minutes and turn off the heat. Add the rosewater and stir. Pour into dessert cups. Garnish with walnuts and pomegranate pits.
